Spring is here!
Old man winter fades back into the mountains with his frosty beards melting away. His watch is over
and the birth of spring is beginning to stir. As I was shoveling what I hoped would be my last snow fall for the year,
something caught my eye. It was a little robin so puffed up he looked like he was on steroids.
I knew (or wished) we were in for an early spring.
Within the same week Bob walked in from his walk with a smile on his face stating the birds are singing once again.
Although there is still a chill in the air, I know the sudden burst of forsythia will happen almost over night.
Our first crocus have delivered their burst of color. Yep I can see it on the horizon.
Like a child waiting for Christmas I can hardly wait to clean the tracks of the garden railroad.
Reset the stone sculptures left by Kenneth and sweep the patio. I don't want to forget the chiminea either.
What fun we had watching the moon come over the mountain and bring the blanket of stars with him.
I guess all I need is my beverage of choice and I am golden.
We are featuring new breakfast menus and are revisiting some other favorites for our guests.
The porches will be in bloom before we know it. So we hope to see you soon.

FEATURED RECIPE
Lemon Squares
One of Sheila's absolute favorites from years gone by.
From the original Betty Crocker recipe with the Sheila touch.
1 cup all purpose flour
1/2 cup butter, at room temp
1/4 cup confectionary sugar
2 fresh eggs
1 cup granulated sugar
1/2 teaspoon baking powder
1/4 teaspoon salt
2 tablespoons lemon juice
grated lemon rind
Pre-heat over to 350. Mix flour, butter and confectioner's sugar.
Press in ungreased square pan (8x8x2) build up 1/2 inch edge.
Bake 20 min
Beat remaining ingredients (not rind) for about 3 minutes till light and fluffy.
Add rind and stir lightly. Pour over hot crust. Bake another 20-25 min.
until not imprint remains when touched. Cool and cut into squares.
Enjoy. Yum!
